Kohlrabi: Kohlrabi is a unique, "space-age" vegetable that produces crisp, sweet bulbs above the soil on swollen stems—making it impossible to confuse with anything else. This Brassica (Brassica oleracea var. gongylodes) offers a delicious flavor profile, often described as a mild, sweet broccoli stem crossed with apple, making it perfect raw for slaws or roasted. Both the purple and green cultivars offer the same tender crunch, and the leafy greens are also edible and highly nutritious.
