Azur Star produces beautiful purple globes that are sweet and crisp with excellent flavor—way better than the woody kohlrabi you might remember. Harvest when tennis-ball sized for the best tender texture, perfect for snacking raw or roasting.
Kohlrabi: Kohlrabi is a unique, "space-age" vegetable that produces crisp, sweet bulbs above the soil on swollen stems—making it impossible to confuse with anything else. This Brassica (Brassica oleracea var. gongylodes) offers a delicious flavor profile, often described as a mild, sweet broccoli stem crossed with apple, making it perfect raw for slaws or roasted. Both the purple and green cultivars offer the same tender crunch, and the leafy greens are also edible and highly nutritious. This fast-growing, cool-season crop is easy to cultivate and adds an unusual, delicious element to any garden.
• Growing Tips: Transplant 4 weeks before the last frost or in late summer for a fall harvest, spacing 6 inches apart.
• Sun Requirements: Full sun (6 hours minimum).
• Preferred Soil: Rich, well-drained soil with consistent moisture for tender, sweet bulbs.
• Harvest Details: Harvest when bulbs reach 2-3 inches in diameter and are still tender, typically 45-60 days; larger bulbs become woody and lose sweetness; both the bulb and greens are edible.
